Hiyashi Chuka (Chilled Noodles)

Hiyashi chuka is a cold noodle dish born in Japan from the urge to use food to cool off and survive the summer heat. Boiled Chinese noodles are chilled with iced water and topped with chicken or ham, cucumbers, tomatoes and julienne strips of thin omelette. The noodles are usually seasoned with refreshing vinegary soy sauce or smooth sesame dressing. Even in the terrible heat of summer, the rich colors and cool texture will sharpen your appetite.
